His job interview for anybody wanting to work in his kitchen was brilliantly simple. He would ask them to fry an egg and depending on how careful and interested they were doing the task would tell him all that was needed to know.

R.I.P Michael Roux one of the greats in French Cuisine a great chef and legend.
The only question i will ask like Poirot in his Belgian Francais accent is " Was it ze wine? was it ze foie gras?, or was it the rich red meats covered in wonderful sauces? maybe it was his famooos sexual appetite that he had, his many mistresses will be quite distressed, i am sure.
