I often do something similar to 'Cover to Cover' in class, the students complete the missing lyrics and then write which version they prefer. Post Modern Jukebox, a group with assorted guest singers, do covers in different music styles and have some interesting stuff.
Nice idea, although depending on the ages of the students, I would personally be prepared for some 'interesting' replacement lyrics!
