Slow cooked lamb done the Cypriot way in a clay oven with Bay Leaves.
Vension shanks also slow cooked.
Chateaubriand lightly covered witgh beef stock in oilive oil and grilled on a pannegrille. Dowse in a liitle congac and burn top and bottm slightky to add a crispness.
I do like fowl but I find it very much the same unless its a bit gamey like pheasant,
