The prodco either owns the rights so you have to buy it either for life of series or a certain amount of seasons, (hence why Bake off and Taskmaster jumped channels) or the broadcaster will commission it from them. If BBC doesn't have Masterchef for life of series, Channel 4 could nick that next time the deal needs to be renewed.
