I like the omelettes you get in Thailand. Deep fried so you get the crunchy bits around the edges. Stuffed with pork. Eaten with rice and chilli sauce.

I Love a french omelette, butter, maybe a few fresh herbs and Philadelphia if I'm feeling saucy 

None of this burnt to shit, stuck to the pan, ham and cheese nacker 'omelette'

I'm a single egg crepe person. Use wholemeal flour mixed with corn flour and a little milk. For a filling ham shoulder and grated emmental.

This takes me back to the mid nineties when I was working near Heathrow and used to frequent an establishment called Jimmy's or latterly Fat boys.

It was an old style transport cafe on the Colnbrook bypass where you could practically purchase anything you needed that had happened to fall from the back of a lorry 

The proprietor (Jimmy) was a larger than life greek Cypriot with a big moustache and curly perm who would greet all his punters personally and regale you with all the latest gossip and goods available at knock down prices 

His gutbuster omelettes were made with six eggs and a what seemed like a pound of cheese and come with a huge portion of chips whether you wanted them or not 

Tea was served in mugs as big as buckets with free top ups and if you failed to finish off your meal doggy bags were available with a few extra chips thrown. In for good measure

In the 18 months I worked nearby and visited this place I managed to pile on two stone but whenever i see an omelette on a menu now it always takes me back to the good old days at this gaff.

I find omelettes a bit strange.

I love eggs in virtually any form, but for some reason omelettes just don't do it for me. Might be the texture which is often a bit off putting?

Surely there is a spectrum there. Maybe 1 egg person is a cսnt, but a 2 egg person like myself should get a little bit of slack.

I take Elizabeth David's advice on the omelette even if she poached (pun intended) that from observing the French. Lots of butter, 2 fresh eggs very lightly beaten with a fork. Then your preferences from there. I don't think you can top just folding it over a couple of rashers of crispy streaky bacon - that latter addition separating us from the bland French who have no idea what a breakfast is.
